Hi In terms of work experience I think anything over a week is perfectly fine and will look good, and to be honest, even a day shadowing an Optometrist is enough. However the more you get the better obviously. You can simply write to your local Opticians etc, or phone them in order to sort something out. Both are fine.

To strengthen your application (I'm no expert) but extra curricular activites look great, such as other volunteering for charities etc. I'm also hoping to get some shadowing sorted out with an Opthamologist (eye surgeon) which will also hopefully look good.
