Too late to withdraw offers and apply for DIFFERENT COURSE THROUGH EXTRA?

Help! I origionally wanted to do psychology but have realised it's too difficult for me to get in and am thinking of withdrawing and going for an easier course on counselling. Is this too late? Would I have to completely re-do my PS?

Also, is a 2 year foundation course still a good degree to have?

Contact the institutions you're interested in and see if they have any spaces remaining for extra. You may have to resubmit a PS thats tailored to councelling.
Also, Councelling requires a lot of work and dedication and is by no means easier (unless you mean because there is less scientific content).
A 2 year foundation course is not an honours degree, as it is a foundation. You may be able to do a top up year to make it into a degree, ask the institution about this.
