    experiment using colours? :dontknow:

like paint the person in monochrome (black and white or grey), while puting colour in the background.

is the whole theme of portrait going to be on elderly people?

erm...perhaps focus on famous elderly people (e.g. former prime ministers and presidents).

I think it would also be a good idea to use other forms of media other than just painting. Experiment using prints? (create a stencil and then either use spray paint or rollers with block paints). By 'rollers', I'm referring to the tool which are similar to those used to paint walls in homes. You could use bright colours in this to contrast with the subject who people would normally associate with 'greyness'.

I think you look at some of the official portraits of the Queen. Many of them vary in style. The one painted by Lucian Freud emphasizes the structure of her face by adding depth and shadow to particular areas. You should look at some of those portraits and maybe you can get some inspirations.
