You need to put a section break in where you want the page numbering to change. The button is on the Page Layout tab in Word 2007+.

Once you've done that, edit the footer in the second section by double clicking it. In the Design tab, deselect 'Link to Previous' in the Navigation section.

Still on the Design tab, click 'Page Number' under 'Header and Footer', then 'Format Page Numbers'. Change 'continue from previous section' to 'start at x'.

Then right click whichever set of numbers you want to change to roman numerals, then click 'edit field' and choose the style of numerals you want.

If you're using any version of word pre-2007, the process will be similar, but you'll have to search through the menus to find the relevant options.
