the first question is why do e.coli produce gas during fermentation and other species do not?

and why are the fermentation tests different between each of the organisms?

e.coli are bacteria, they respire aerobically during fermentation producing C02 gas. other species may ferment anaerobically and therefore would not producae gas but alcohol instead
