    Why have they stopped at the x squared? (the question says complete up to x cubed)

    The third term in the expansion is  \displaystyle \frac{(-1)(-2)(2x^2)^2}{2!} = 4x^4

    So the first three terms are:  1 -2x^2 + 4x^4 + \ldots , we need terms upto  x^3 hence  x^4 is not needed, so we write  1 - 2x^2 + \ldots
