I originally wanted to study English Lit with Spanish but am now thinking more toward international business with Spanish as I think it would be more practical and lead to more job opportunities?

I would certainly agree with you, although it depends on what you'd like to do in the future. Lit + Spanish would probably lead to teaching, maybe translation... Whereas International Business possibly offers you a wider range of possibilities. I'd personally go with Business, but do consider your preference (not purely based on job opportunities)!
