    Minors
This question will probably be answered when I submit my courses on UCAS, but I do love knowing things a little in advance

I hope to study French and Spanish with Italian (I think I said that right? Major, Major, minor anyway)
So... do I apply for French and Spanish, THEN when/if I get to Sheffield pick my minor course? Or do I spew all that information onto UCAS?

Generally in the UK, we don't use the major/minor system; you pick a course--for example 'French'--and that is what you study.
Some courses appear to be 2 separate courses--eg 'Russian and Slavonic Studies'--but is actually just one course.
Finally, you can do 2 unrelated courses--eg 'French and Physics" as a joint honours degree, which is somewhat similar to doing a double major.

If you are talking about doing the BA Modern Language course at Sheffield (http://www.sheffield.ac.uk/slc/undergraduate/baml), then I imagine that you pick your 3 languages when you arrive in the 1st year, but you should say what languages you wish to do in your personal statement.
