So I've made my firm and insurance choice for uni but now I may be having second thoughts. I'm not sure if I'm going to get the grades but if I do, is it possible for me to not go to my firm choice university and reapply next year or take a year out?

Yes you can decide not to go. And reapply next year.
Or you can contact the university now and ask them if they would defer their offer. That means you can still go there next year without having to reapply (assuming you get the grades they require this year). It's best to do this now rather than on Results Day.
