What is the best type of cheese?

For me at the moment it is probably Edam (or Stilton, brie, Camembert... so many to choose from!)

I am a cheese fan and there are hundreds that I like, almost everything except the strong goaty ones Compte is a good hard one,
Epoisses de Bourgogne is a good soft one.

My favourite: hard to choose between halloumi, mozzarella and jarslberg. All so different to each other, but in the end I went for mozzarella.

We had halloumi last night. It was sliced and then baked in the oven.

A couple of pieces were over-baked, but were really nice. Dark brown, almost caramelised and a little brittle/crunchy. Very tasty!

There is something quite special about a good piece of cheddar though!

Not my choice but I can see why people have gone for it!
Halloumi is just so damn versatile and usable every day. I would agree Gorgonzola should be there, beautiful on Pizza that.
