I'm thinking of doing Psychology at uni and i've been looking at different uni's. Nearly all of them require you to have grade B in maths at GCSE. I got C in GCSE maths but i did psychology at GCSE and i'm also doing it at A level.
Will they reject me if i get the A level grades but i don't have GCSE maths at grade B?

Try emailing admissions departments to see what their policy is. Its pretty common for people to redo their maths GCSE during the AS year.
