And surely if they are selling coca cocola they are tampering with a branded product leading the legal troubles?

I'm pretty sure it's just discount cola instead of coca cola. Hence why it tastes different.

Impossible. Beer and soft drink companies ship their beverage to pubs and clubs in a pressurised barrel. That pump that they're dispensing your drink from is connected to said barrel. They can't just open it up and add water.

I work in a restaurant, sometime on the bar and we do fountain drinks on tap. This is where we order the sugar syrup (all the cokey goodness but really thick and concentrated) and we dilute it down with coke's own branded fountain tap - this mixes the syrup and soda water together in a certain ratio. However, if the button isn't properly pressed - only soda water comes out as the syrup stops flowing. When these taps get old this tends to happen more often.
