(x-3)^2-9+11

-3 x -3 = 9, so it's +2 to get to 11

Why would it be +20?

You're essentially doing:

(x+a)2=x2+2ax+a2(x+a)2a2=x2+2ax\displaystyle (x+a)^2=x^2+2ax+a^2\Rightarrow (x+a)^2-a^2=x^2+2ax
