saag smells more lush lol! Its runnier and thinner
Palak has leaves in it...or something
Saag is light greener, palak is darker
You can get saag in a can palak mostly leaves

thats what my 19 years of being a pakistani have taught me about it

Actually I just remembered I asked my grandma about this and I think she said saag is what you call any green leafy veg and palak is a type of leafy veg, or the other way round. I can't really remember :redface:
