I received an offer for 2012 entry with a fairly average set of GCSE's. I got some A* but not straight A*s or even straight As. It didn't seem too much of an obstacle for me but I did get asked in my interview why my GCSEs were so poor by comparison
As people said to you on the last thread, you are really going to have to contact Oxford direct about your circumstances which are pretty unique. Email them, or it may be better to book on an open day and ask a tutor in person.

(Also note that for Law, Oxford require as an absolute minimum a C in Maths GCSE or other evidence of numeracy. If you don't have the C and aren't taking Maths now you may need to retake but again, check that.)
How much do they care about GCSEs when applying for Mathematics at Oxford? Would the grades in my sig be orite?

Should probably be in this thread...but anyway I think the MAT is pretty important for Maths, so long as you do well on that and have good grades in your Maths qualifications you should have a good chance, obviously do as well as you can in all your GCSEs though!

I can't speak for subjects other than the one I applied for but at my interview, I was told that the materials science department only consider your results in the most relevant subjects you've studied at GCSE (maths, physics, chemistry and D.T. if you did resistant materials). The others are relatively unimportant to them.

The many A* ones? yes they would be fine.

Other grades are more important, especially for a subject so specialised as maths.

I got 4A*s, 7As, B in an AS, Bronze +Silver DofE, GIC3 Gliding Qualification, Numerous awards for sports (county, region, country etc) in year 11 and I'm predicted 5A's at A level... are they good enough? would only having 3A's at AS be good enough?

Things in bold are irrelevant for an Oxford application. Your grades are good enough but you have completely neglected to mention what subject you even want to apply for, it is a very good idea to do extra curriculars related to your subject!

I want to Study Biological Sciences. The AS I took early was purely sicence dissertation and research based which i did on polar bear extinction and how it survives. I'm really interested in arctic wildlife biology, which is why my Extended project is all about arctic animals. I'm trying to find work exeperice working with animals, but its exceptionally difficult because the topic is so popular where i am and theres very little around... what would you suggest i try and do?

I know little about science but when I applied (for Cambridge/Geography) I read books and went to RGS lectures. Try to find some work experience in the biology field over the summer perhaps?

Yeah I'm trying to see If I can get experience in the national marine aquarium but its so popular round here because I live in marine science centre. I read lots of books, watch loads of documentaries, always have! but if i only get 3A's at AS do you think Oxford will look at the lower grade as a put off?

They really won't it, it is a B not a U! I got an interview with Cam with AAAC at AS and my friend also got one with something like BBCC!

I want to read history, and it's my passion so I think that I could get an A* for that...

Wait until you actually get your grades, they will be different from your predicted ones!

well in history we've had a couple of exams and controlled assessments and I got an A for one exam, A* for another, and 3 As for controlled assessments... I really want to study it. I will try my best though

Do you go to Oxford/Cambridge?

Good luck!
Don't worry if you do get a B or two, particularly in unrelated subjects, it's definitely not the end of the world particularly as you must have a heavy workload doing so many.
