Well, from DELC, you could do Italian/Russian/German/Spanish/Swedish/Norwegian/Danish. I don't really know about anything outside of DELC, but I should imagine you could also do stuff like Chinese, Arabic, Japanese, Latin or Celtic from introductory level.
