From what I've heard, it's only the History department that specifically ask for a high number of A*s, and the English and Medicine departments also look for them. I'd think with Theology, GCSEs will only be one part of your application that will be considered along with your AS results, A2 predictions, ps and reference (like any other university). Also, you may like to look here which states that Theology uses a GCSE standardisation measurement score when assessing Theology applicants (1 point for each A* and 0.8 for every A, then add it to what your school is worth to get your score).
