glad you asked, food science is basically the study of food (hehe), learn how to make bread, milk peanut butter all on a large scale for industry, the biochemistry of food.. pathogens in food, food safety, what's safe to eat.. how to determine expiry dates, how ot determine nutritional content, why trans fatty acids are bad for health, how to make food look asthetically pleasing to the consumer's eye (product development) how to reduce fat on cookies hehe.. different from a nutritionist. nutritionists are more concerned about how food reacts in the human body, while we are more concerned about different types of carbohydrates, fats, sugars, fibre plants.. meat etc etc..
its food scientists that invent new types of food, (like the research lab in willy wonka's factory that invented the chewing gum that never loses its taste, dinner pills that keep you full for days after swallowing it.. etc etc

Sounds sortof similar to what my dad did - I think his was abit more specialised though (dairy tech).
