Use the UCAS course search facility (http://search.ucas.com/cgi-bin/hsrun/search/search/search.hjx;start=search.HsKeywordSearch.run?y=2010&w=H) to find courses which might interest you. Click on the course you fancy, click on 'what qualifications do I need', then click on 'English, Welsh and Northern Irish Qualifications' - right at the top of the page it will tell you the minimum number of A levels required AND the minimum number of A levels preferred for that particular course at that institution.

I did 3 AS levels in the first year, then carried on with them for A2 and took up English Lang & Lit as an extra AS in the second year. You could try this route, although beware of the fact that the extra AS might distract you from your A2's, but if you work hard enough you shouldn't have a problem.
