You don't apply for a specific subject in the US. It doesn't matter which SAT IIs you take, just take the ones you'll get the best scores in. Actually I think some universities might require Math... just check their websites.

You should be aiming for scores of at least 700 in each section (SAT I) or subject (SAT II).

Typically tech schools will require two subject tests for math and science, but requirements will still vary by school. Most colleges don't require specific subject tests. As Pink Bullets said, look at their websites.

My recommendation is to do subject tests in your best subjects. If you plan on doing a math test, chances are you'll be better off taking Math Section II. If you want to take Biology, make sure you decide whether you want to do the ecological or molecular part before you start studying.
SAT I: Aim for 2000+, preferably 2200+.
SAT II: 700+ in whichever subjects you pick (some schools have requirements).
