The French OIB (Option Internationale du Baccalauréat) is by far the hardest imo.
A-level equivalent in Maths, Biology, Physics, Chemistry, English Literature and French and English History (you must also "specialise" which is the equivalent to doing "further" in maths, physics/chemistry or biology.
On top of all that, you take standard lessons which are virtually A-level equivalent (for those that know, they are the equivalent to the american AP) in French Literature, Philosophy, a language of your choice ( I chose German) and Sport. You can also take options in Latin, Art, Music or another language.
All this amounts to 38 hours of lessons, not taking into account travelling to and from school, or options. -

It does have english! Is pretty much what I'm doing (I'm doing bio instead of physics thank god!) -

HL: Group 6 Subject, Maths, History/Philosophy/A1 Language/B Language (if you are not fluent)
SL: Physics, A1 Language, Group 3 Subject/Latin/Greek -

It really depends on the teachers. And on the nature of the subject.
First, how you define difficult?
If you mean the courses that are hardest to score highly on, these would be the ones marked most subjectively. Thus, the toughest combination to score 7's on would be:
HL: History, English A1, Philosophy and Laguage B
SL: Math and Science
If you mean the courses that are intelectually challenging, these would be the sciences and math. Thus, the toughest combination would be:
HL: Math, Physics, Chemistry
SL: Languages and Social Science
If I now had to choose my combination, I would definitely do the HL Maths and Sciences - they are graded much more objectively and if you are good at them, they are much easier to score 7's on than the humanities. Even if you are good at history/ philosophy/ whatever social science and even if you put the same amount of time in studying for these, there is no guarantee that the examiner won't be grading your work on a bad day.
