Not a big watcher of the genre but I really enjoyed Full Metal Alchemist, even if the lad who voiced Alphonse (English dub) sounded like a ****!
I also loved Howl's Moving Castle and Spirited Away if they count?

Death Note is awesome as is Hellsing. Then One Piece, Dragonball Z (don't like the original or GT), FMA, and Akira (film). There are a few more that I'm missing right now.

Death Note is a classic, well recommended even for non-anime fans!

FMA is supposed to be a 'classic' aswell but I never really enjoyed it, maybe if I watch Brotherhood?

Brotherhood is a better series, the pacing is much improved which was one of the problems with the first series so even people who wernt so into that one liked brotherhood.
