Stop over analysing everything and just ask her straight up. You have nothing to lose. Better do something while its there or else you might regret not doing anything at all.

If she thought I was gay or uninterested why would she give me a hug after our coffee and a hug with a big smile when she sees me the next day?
Oddly that's pretty much where I got that idea from. She found you non-threatening. It may be massively untrue, of course, I'm just generalising from my own thoughts. But the only guys I hugged where my gay mate and guys that were like brothers to me. I didn't hug boyfriend until AFTER I'd drunkenly confessed I liked him.

She might like you, but have thought you didn't like her, hence the smile and hug. But now there's a chance for her, she could be getting scared. Either way, whether I'm right or not (probably not, tbh ) you have to do something to get closure!

She's enjoyign the attention but when things are getting a bit too intense she's backing out. Then when you stop making an effort, she appears again, missing your attention. I don't think you'll be getting anywhere with this one. If you've got nothing to lose, then just out how you like her and if she feels the same.
