Wait until you've actually had some lectures and then see which ones suit you? You can always bulk order later.

I didn't use very many textbooks tbh, most of my learning was done from lecture/practical notes. Robbins Pathology is extremely comprehensive but probably too much for most things. I found Lecture Notes on Microbiology quite good later on, but it will depend on your course as to how appropriate that would be - it's quite clinical so wouldn't have been suitable for my second year pathology course.

I certainly wouldn't feel that you have to buy special books for parasitology etc, which is a fairly niche topic.
