REGIONAL CUISINE: Specific Regional Delicacies you LOVE!
It's easy enough to say "I love national cuisine" as it encompasses so much... generalising food to the entire country unifies us, fair enough, but sometimes there's something super-tasty you can only get in YOUR specific region!

So are you proud of a local treat? Let me know your favourite!

Here in Stirling (Central Scotland) you can expect to enjoy a Munchy Box:

(A box filled with chips, chicken, mushroom, veggie and fish pakora, chicken chaat, donner meat, burger, sausage, onion rings, salad, sauce and all manner of other regional items (some places do it with pizza slices too) to be consumed both in the evening and the inevitable morning after!)

    Lasagne/Macaroni Scotch Pie

Stonner Kebab (a sausage covered in kebab meat and sauce, covered in batter, fried

Pizza Crunch Supper (a pizza, twice fried, once in batter, with chips)

Irn Bru Saltire Rock is phenomenal. Get it? Well, it IS.

Let me know YOUR REGIONAL CUISINE!

    Welsh Cakes!

Oh my lord, I've been to England and they are scarily sparse on the ground there.

    Scrumpy cider.

CIDER SHOULD BE STILL AND CLOUDY.

Preferably with a dead rat in the bottom of the barrel. Adds flavour.

    Yay for scummy Somerset farmers!

Ah lad, the North West 'as produced some of finest foods in world!
    - Lancashire Hotpot
    - Cumberland Sausage (I reckon we should take a page out of Champagne's book, and only label a Cumberland Sausage if it comes from Cumbria, everything else is just 'pseudo Cumberland Sausage,' and often poorly spiced!)
    - Meat and Potato Pie
    -Eccles and Chorley Cakes
    -Black Peas!

And not to mention the greatest invention of all time, Vimto! Although it's hardly a regional specific delicacy.

The only things I can think of adding to the above list of North West delights are:
Pease Pudding - a sort of yellow mushy peas made from yellow split peas. Often sold by street vendors in Preston and other towns.
Butter Pie - like a meat and potato pie with just the potato and a load of butter. Good for a cheap but filling bit of chippy food - normally 70 or 80p.
Pea Wet - the juice from mushy peas - used as a sauce for pie or chips.
Black Pudding - not exclusively local but Bury has cornered the market on this one.
Tripe and Vinegar - So disgusting, it would make a mountain goat puke but for a lot of old timers - it was a treat growing up when there was very little meat and so they love it.

Black pudding, as long as I don't think too much about what it actually is!
    And Lancashire cheese, mmm

Staffordshire oatcakes! So, so delicious with cheese (although I'm vegan now so it's something of the past) - no idea why nowhere else eats them.

From the Alsace region (also SW. Germany):

Choucroute garnie - Sauerkraut with sausage and cured meats
Knacks mit Kartoffelsalat - A sort of Frankfurter style sausage with German style potato salad (no mayo - dressing is 1/3 each of vinegar, oil and mustard - tastes much better that way)
Flammkuchen - Onion and Bacon Tart.

There is a stew coming from Dublin called Coddle. It looks horrific, but it's incredibly comforting on cold winter nights.

It's a clear broth, with potatoes, carrots, onions, sausages, bacon and herbs. It looks a bit off because the meat doesn't become coloured at all, so it still looks raw. It IS admittedly very salty because of the bacon, but it's very tasty and comforting. perhaps simply because I had it all the time when I was a kid.

And it's extremely difficult to beat a good Beef and Guinness Pie.

Yeah and sometimes it has bacon wrapped round it as well

I never had the variant but I can only see it making things even better. I might try making this dish at home actually. Apart from the sauce, it can't be that hard.
