The Mouse and the Mask (by Dangerdoom - MF DOOM + Dangermouse) is really good, and probably one of the most approachable DOOM albums. There was also a follow-up EP called the Occult Hymn EP which was released as a free download and is pretty good, but you should listen to the album first.

Madvillainy (by Madvillain - MF DOOM + Madlib) is also great. This is the one that got me into his music. If you like other stuff Madlib has done, you'll probably like this.

Vaudeville Villain (by Victor Vaughn) is pretty well-liked generally but I'm not that into it. It's still good DOOM, but I find myself getting bored with it more quickly than most of his other albums.

Take Me To Your Leader (by King Geedorah) is IMO a bit of an overlooked gem. It's got a couple of bad tracks, but the best bits of the album are up there with his best material overall. (see the song I posted earlier)
