    I can't really afford to go to conferences any more. This one in Canada is my retirement as an academic. Thanks for thinking of me though.

    Sorry to everyone for forgetting to put up the recipe for so long. Its in a book so it was more of a hassle to copy.
    Syrian Apricot and Lamb Stew


    Serves 6
    - 1 TBS Olive oil
    - 500g lamb, cut into 2 cm dice
    - 1 brown onion, finely chopped
    - 4 garlic cloves, crushed
    - 1/2 tsp freshly grated nutmeg
    - 1/2 tsp ground cinnamon
    - 3 TBS lemon juice
    - 375ml chicken stock
    - 50g dried apricots, soaked in warm water
    - 60g raisins
    - Salt and pepper to taste

    Directions:

    Heat the oil in a heavy-based saucepan over medium-high heat. Add the lamb and cook, stirring, for 6-8 mins, or until brown on all sides. Add the onion and garlic and cook for 2-3mins, or until the onion is soft. Add the nutmeg, cinnamon and lemon juice and cook for 2 mins to allow the flavours to infuse.

    Add the chicken stock, increase the heat and bring to the boil. Reduce the heat, cover the pan and simmer slowly for 1hr, or until the meat is just starting to become tender.

    Drain the apricots and add them to the pan with the raisins and 100ml water. Stir through and simmer for a further 20mins, or until the lamb is very tender. Skim off any scum that rises to the surface. Season to taste and serve immediately.

    I've been doing it with beef because Morrissons doesn't sell diced lamb. Also I've been using cider or sweet white wine instead of stock. I generally ignore the instructions and shove all of the ingredients into a slow cooker :yy: Also I've been adding cubes of sweet potato, which go very well since its already a sweet stew.

    Had a weird email through saying I'm entitled to go on a 3 day research training AND team bonding (and no I'm not kidding) residential course - has anyone else experienced this? Anyone been on it? As it actually looks quite good... But I'm skeptical of team bonding with a load of other PhD students.

    Injuries suck. I'll always remember the one to my leg which put me out of Rugby for a while. Damn. :mad:
