cupcakes definitely but I also want to make hot cross buns. Traditional and I don't like lemon peel and the store bought ones have tonnes in!
I may opt for a lemon drizzle cake and shove some mini eggs on there to look seasonal. Most of the family are diabetic now so I guess it's up to me to enjoy it all.

I was thinking of a Simnel cupcake version actually now you mention it. I wasn't really aware of Simnel cakes before but I like this recipe as an adaptation:

I doubt I'd have room for the traditional 11 marzipan balls on top of each one but I could make a batch of 12 and just eat one for good luck before presenting them with a marzipan ball each? -
