I went to the one in London last saturday, which one did you go to? I do need to expand my decorating talents a little bit, but I thought I better play it safe for now!(Original post by AJ)
These look really similar to the ones I made in a cupcake decorating class the other week! I had to do a double take! You didn't happen to go to a cupcake decorating class did you? -

Oh cool! Yeah I went to the one in Brighton with my sis. Was a deal through travelzoo I think. Lots of fun except on the way home I dropped my cupcakes! They still tasted good though

Easter Nest Cupcakes (my own creation)

RECIPE
Makes 12!
Vanilla cupcake ingredients: 115g room temp. unsalted butter, 225g caster sugar, 2 room temp. large eggs, 150g self-raising flour, 125g plain flour, 1 tsp baking powder, 120ml semi-skimmed room temp. milk, 1 tsp vanilla extract
Vanilla buttercream ingredients: 225g room temp. unsalted butter, 390g icing sugar, 1 tbsp room temp. milk, 1 tsp vanilla extract
Chocolate nest ingredients: 100g milk chocolate and about 4 wheetabix bars and some Mini Eggs to decorate
Method (cupcakes): Preheat oven to gas 4/180C and line a 12 hole muffin tin with 12 cupcake cases (i use muffin cases).
In a large bowl cream butter and sugar, which takes me about 3 minutes using an electric mixer, and then gradually add eggs beating after each addition. In a separate bowl sift the flours and baking powder together and in another mix the milk and vanilla extract. Add 1/3 of the flour mix to the batter, beat well, then a third of the milk mix and beat well and repeat this until all the flour and milk have been added. Spoon the mix into the cupcake cases (filling about 2/3) and bake in the oven for 25 mins - until golden brown and springy!! Remove from oven and cool in tin for ten mins or so and you can ice when they are completely cool
Method (icing): Using an electric mix beat the butter, milk, vanilla essence and half of the sugar until smooth and nice and then add the rest of the sugar and beat until completely smooth.
Method (nests): Melt the chocolate and crush up the wheetabix and combine until all the wheetabix is covered in chocolate and can be formed into shapes. To make the nests I used mini cupcakes cases and put a tsp of the mix in one and stuck a Mini Egg on top and let it cool and set
Once cakes are cool ice with the buttercream (I use a piping bag to make it all swirly) and carefully place the set nests on top! Feel free to decorate with more mini eggs, sprinkles etc
