I want to become a recording artist in the future and I've noticed that most music courses in universities are quite classically based and offer careers in teaching, composing etc. but not much in performing modern music- any colleges and courses which can?

The number of people who get a record contract is extremely small and very luck based. The usual way is to record and tour on your own money until you have enough of a following that you get signed, which you may never be. Record companies don't pick people up based on school experience or even demo tapes any more.
You should aim for some more common career using your music skills and if you still really want this, do it on the side. Apart from learning how to use DAW software, a university course is only a small part of this. -
