If you put the mixture in the fridge over night it helps get the bubbles out, which makes for more even pancakes. -

Seriuosly though, sorry, been dying to do that to someone since I found the site yesterday.
When I make pancakes, I just mix an egg, with some milk and flour (and maybe some cinnamon) by eye. Sorry I can't be more helpful than that. -

Separating the egg whites, and adding a generous amount of baking powder works well for me. I only use two eggs.
