If you put the mixture in the fridge over night it helps get the bubbles out, which makes for more even pancakes.

Seriuosly though, sorry, been dying to do that to someone since I found the site yesterday.

When I make pancakes, I just mix an egg, with some milk and flour (and maybe some cinnamon) by eye. Sorry I can't be more helpful than that.

I've had good results following the Jamie Oliver recipe:

Separating the egg whites, and adding a generous amount of baking powder works well for me. I only use two eggs.
