    Why does chicken in chinese restaurants...
    have such odd shapes/textures. Its usually quite chewy in texture unlike traditionally cooked breast meat.

    I love my Chinese takeaways but it does weird me out a little. And whilst I'm sure there are no cats and dogs being used on mass in the UK, the texture does little to shake these images whilst I'm eating. I always get the image of eating snails. :eek:

    So yeh, what causes the texture? Is it just poor quality chicke/reprocessed? Or a different cut of chicken (thigh maybe?) or maybe a specific eastern cooking technique (I've heard something about baking soda coatings/soaks?).

    Please help me shed light on this so I can chow in peace.

    Well, it all depends on where you eat. Different places have their different cooking techniques, but there are always bad restaurants around..

    There was a rumour going round near me that a Chinese restaurant got shut down as there were loads of dead cats in their freezers. This rumour gets worse as they found out about the cats because as someone was eating their chinese they found a microchip. Ahhh, the rumours my area produce...

    I remember reading somewhere that most Chinese takeaways use a meat glue to change the taste and texture of their food - it's called transglutaminase I think.

    That might explain it, or maybe the MSGs having an effect.

    Off topic but I've always found with some Indian restaurants in my region the chicken tikka has a mild soapy aftertaste, its not the coriander but maybe surplus baking powder? Might be something in the pilau rice (the food colouring?). I don't know, its odd though.

    A restaurant in New York got found out for skinning street rats and dead cats and calling it chicken :/

    A Chinese in LS11 area of Leeds apparently put bodily fluids in their sauces. I'll let you figure out which ones.

    I guess their sweet and sour might also taste a bit salty as well :K:

    we had that exact rumour in my town too. :/
    the place which was supposedly 'shut down' is clearly still open though, and this rumour was several months ago.
