    What about something like this: Salmon and broccoli pasta? It's pretty simple and tasty, and you can have it with extra veg if you want. Can't remember what starters you said you might have, but it's not too heavy or rich so should go with most things.

    Some of my boyfriend's favourite homecooked meals are;

    Chicken and pepper fajitas
    Homemade bacon cheeseburgers
    Roast chicken dinner
    Chicken and vegetable stir fry
    Homemade fried chicken with mashed potatoes and peas
    Warm chicken ceasar salad
    Spaghetti carbonara

    ...and they are all super easy to cook

    how about a STIR-FRY?

    Noodles/Rice
    Meat - he must like SOMETHING, just cut it up OR failing that some vegetarian chicken-style pieces like Quorn
    Vegetables - Optional - I'm thinking carrots, broccoli, sweetcorn...
    SAUCE OF SOME KIND

    ...5 mins max (if you're cooking with Quorn).

    Ingredients: Red pepper, onion, mushroom, cajun spice, garlic powder/granules/fresh (whichever one you prefer not all:fangs:), chicken, sharwoods chilli noodles, dark soy sauce.

    So mix up some groundnut/rapeseed oil, salt and cajun spice and put the chicken in. Chop up all the veg however suits you, and prep the garlic if fresh.

    Heat the frying pan, gas/electric highish setting, put a some oil in. Place the cajun chicken in the pan and turn a few times. Put the veg and garlic in the pan fry off a bit, bang some salt in, turn heat down.

    Boil kettle, heat pan put boiling water in bring boil put one/two nest of noodle in depending on how hungry you are, follow instruction on pack.

    Cut chicken up into pieces in pan, turn heat up. Drain noodles and rinse with cold water now put in frying pan with chicken, add dark soy sauce, toss it, once it's all hot. Done.

    Try not to overcook the chicken. No point me giving times because cooking is not an exact science and my cooker is :poo:. You need to have the boiling water ready for cooking the noodles when the chicken is half cooked.

    Sorry for lack of measures too, trial and error, you know what you like.

    Minced beef = have a bash at mexican, wonderful stuff, have it as spicy as you like/don't. Google it, good luck with getting a good and ready avocado if you go this route:rolleyes:

    maybe some panini? (which is esssentially a very fancy sandwich.) And don't forget the haloumi cheese and tomatoes! :drool:
