Thanks!! That one looks possibly better than the recipe I found which looked like a failure. I might test this one out once I've done the conversions.

My sister is allergic to all dairy, and can made very nice muffins, so it is certainly possible.
And I usually have dairy-y, chocolate muffins, so it's not like I've just got used to worse, buffer free ones. -

Google Nigella Lawson's Pear and Ginger muffins — just oil, no butter — and they were really good

I have tried these and they were really nice! They have oil though. I made them gluten free flour too and they were still good! (Oh, and measuring in a cup worked for me too!)
I haven't tried these ones yet and they seem like more healthy ones than sweet but they sound good.Last edited by Sprockette; 01-07-2012 at 19:07. -

I've given up now. Until I get this oven looked at, I can't do anything.
I've barely been able to bake at all this past year, cos of the crappy ovens in halls. So I feel your pain.

My last one broke and the landlord refused to fix it until after I moved. Hoping this one gets fixed/replaced quicker, especially as the hobs are broken too.
I just tried these 50 degrees lower and they still cooked on top and sunk in the middle. -
Re: Muffins without butterIf the middle isn't cooking have you tried putting tinfoil over the top - should keep it from burning while the rest cooks.(Original post by hannah_dru)

Used the American one (converted) but my oven is very temperamental and likes to overcook when I bake. Might have to be rice crispie cakes for my friend instead!
