Pancake focus group
Evening folks, doing a bit of research for a new pancake parlour business (hypothetical currently, although i would like to go ahead with it), i was wondering if you could tell me what you would be looking for in a pancake restaurant, perfect recipes, style of interior, prices etc.

I think free-range eggs are a must, also a variety of "light/healthier" options for the health concious. Both sweet & savoury options. And it would be cool to have a Choose your toppings menu option~ pancake base, and then you can choose two or three additions like flavoured sauce/cream/fruit/ice-cream/maple syrup/honey etc
Crepes would be nice also! -

Indeed, i am currently conducting a questionnaire which will help to dictate my menu, one of the questions being preference of Savoury or sweet pancakes. Which ever gets the most votes, will get the majority of the menu. Free range eggs is a great point, (and will also give me a reasonably USP?)(Original post by Viennaberry)

I like the idea of creating your own pancake, especially base. I'm currently going for the Thick american stacked style, however i think having an option for crepes is a really good idea.

Basically, have a large quantity of nutella
I'll be sure to mention in my business plan i will need an extra storage room for the sheer quantity of nutella

Re: Pancake focus groupI have asked the question 'eat in' or 'takeaway' on my questionnaire, originally i was planning a small takeaway 'shack' with no seating area, however upon further research i found that any people would like the atmosphere of a modern pancake house. I think takeaway is a brilliant option to have though

I think pancakes are always growing in popularity, so you're onto a good thing ^^ Sweet toppings I imagine will win, but it's what we're more used too.
Another USP which I haven't seen anywhere, would be to do specialist combos- pancakes which are of a theme like traditional desserts, i.e;
Banoffee pancakes- Pancake + sliced banana + toffee.
Apple crumble- Pancake + caramelised apples + streusel crumbs.
'Roly poly'- Pancake + strawberry jam + cream.
Jaffa- Pancake + marmalade + plan choc chips.
Eton mess- Pancake + sliced strawberry + whipped cream
Mocha- Pancake + espresso ganace + chocolate whipped cream

Lemon juice and shugaa has to be on the menu. I'm thinking that an aesthetic that is reminiscent of an ice- cream parlour may work well, however, it depends on what type of market you are aiming at.

I also thought having a pancake of the day thing, similar to that of Subway, where a different pancake each day of the week is a little cheaper? The themes are brilliant, thanks again Viennaberry -

I'd say the most important thing is to have variety and choice. Examples:
- Savoury or sweet
- Eat in or take away
- American or European style pancakes
- Choosing any combination of toppings
- Veggie/vegan option
That kind of thing. I'd say my ideal for that kind of thing would be like a build-your-own style. You choose what kind of pancake you want, then you choose any combination of any number of toppings from a list, savoury, sweet, whatever. The toppings would have a small cost each, so the more toppings you wanted the more you'd pay. You could offer special toppings or themes of topping each month or week, e.g. traditional British desserts (strawberries and cream, rhubarb and custard?). But you would also have a fairly wide range of toppings which were always available, things like maple syrup, lemon, sugar, jam, nutella, cheese, bacon (if you're offering savoury), etc. -

The extra toppings idea is brilliant, i was thinking something like that of Dominos, where you create your own base/sauce/toppings all of which are 50p each for example.(Original post by Amwazicles)

I think seasonal menus are are good idea, or at least seasonal Specials e.g. at christmas time a cider + minced fruit pancake (thinking aloud) -

Mostly cup of flour to a cup of nondairy milk, although for fluffy pancakes you can add mashed banana in and cook with a lid on

Indeed, vegan pancake (see few posts up) is an excellent point, and something i completely over looked!
