Do all the obvious like ham and cheese crepes, this will get people in for things like lunch instead of just more snacky.
The best one I had was made by my dutch friends, it was a bacon cheese and maple syrup one, but they fried the bacon and then just tipped the mix in there with it and threw some edam on top, then plated it up and put the syrup on, so it was more like if you were making an omlette than a pancake, so the bacon was in it instead of on top or whatever, it was a thinnish pancake not a thick american one though (although thicker than a crepe). You should do pancakes from around the world, like Korean types, Japanese okonomiyaki etc that would be fun
