How easy is it to change courses?
What if I don't enjoy my course at university, how easy will it be for me to change my course and how quickly will I have to act in order to get a place in my new field?

As far as I know, you would need to act within 3 weeks of starting. Later then that, would be difficult to change. (of course, change would only take place if there are places left on the course you want to change too).

It's within the first few weeks thats if the course you want to do is completely different, but also depends on your grades you got to get in and availability and if you meet the requirements for it such as specific courses.
If it's within the same department you can change a lot later, if they accept or after the first year dependent on grades sometimes.

Will they take an interview or ask for another personal statement as to why you want to do this new course instead?

Well at my uni, once your already there, you just got to talk to the department that does the course you wanna do, talk to them, if they got places and willing to take you, go talk to your current department and than you'll just have to fill out a form.

This and your other question vary so much by university, but also by subject and department. I know someone who managed to change course 3 times and they weren't particularly related, but I know of people who posted on TSR wanting to add/drop a minor subject and weren't allowed.
