You can't have two separate policies on one car. All you can do is look to find an insurer where you enter the amount of miles each drivers does.

Re: Car insurance two people for one carIt would be classed as fraud to have more than one policy on a car. As what about when it comes down to a claim. You could then claim through both insurers and try and get double the amount you should of.
All legal insurance policies are submitted to the MID, so they would know easily and inform both insurance policies. Which could then lead to having your insurance cancelled.
Ultimately you need 2 different cars to have 2 separate policies. -

That is not the case, it is perfectly legal to have 2 insurance policies on the one car. Different insurers will treat this differently so you would need to check the policy wording. Some may refuse to pay out and others may only pay their share.
The simplest thing to do is to ensure there is no overlap in the cover. For example your dad is insured on a fully comp policy. If you had a third party only policy then there is no overlap between the policies and I believe most insurers would not have a problem with that.
Only one policy details will be on the MID at the same time though i believe so if you get pulled over by the police at any point they would have no proof of you being insured (ok if its during working hours as they can call your insurer, but if its late at night they have no means of proving you are insured). -

Having two policies on one car is unusual, and is something you would need to check with the insurers. Don't go on any generic advice, actually make sure ask the insurers you intend to use. I think it's a bit of a mad idea simply because it's going to cost a lot more.
If you think you'll use the car more then you need to be the main driver, and then your dad can be a named driver (if your mum drives adding her will probably lower the cost, and it's useful if she needs to drive the car).
