    Your favourite butternut squash recipe
    Butternut squash is delicious roasted, but whats your favourite BS dish?

    We bought one and were going to have it as a side dish last night. But dad was doing lots of other veg and forgot.

    I was thinking of doing a risotto with it :holmes:

    Plus, what flavours go best with it? I know garlic does, but what else?

    Sage goes really well in a butternut squash risotto

    Another idea: make a coconut-based curry with it and throw in some chickpeas.

    I second the sage and butternut risotto combination. I use this recipe every time and it's brilliant. Pine nuts or almonds go well with it also if you want some different textures.
