    Sponge cake
    Okay guys, I'm going to try and make a rainbow cake and I want to make it all from scratch. Does anyone know of a good sponge cake recipe? One that will turn out fluffy and moist and not hard or stiff?

    Also I only have one cake tin, so would the mixture be okay left out while the first part bakes?

    Any advice would be greatly appreciated!

    I only have one cake tin, so I left half the mixture out while the other side baked. It turned out perfectly!

    It's not my blog, mine is in my sig. I am not sure what rainbow cake tastes like, surely it is just a sponge with food colouring? I like a really well made sponge though!

    You are a star, thank-you very much! I'll hopefully be trying it in a few days, I have a week off and I'm making it my little project! Going to try and put fondant icing over is and try and make my own fondant roses with colour paste!

    It was a success! And it turned out so pretty too! Best £20 I have ever spent on those colour gels.

    Thank-you! It's the first cake I've ever made from scratch, I always use a packet mix. It's actually all right! I keep cutting slices off and eating it! Going to make cupcakes for a party tomorrow using the rainbow theme again!

    Do it, it is SO worth it, everyone absolutely adores the cakes. I made rainbow cupcakes for a party last night and just seeing everybody's shock and delight at biting into the cupcakes and seeing all the colours was just worth all the effort and money. My mum gave a bit of my cake to my aunt and she now wants me to do my cousins birthday cake and my mum wants me to make my neighbours a cake for their birthday.
