How do i know if someone has declined an event on facebook?

I invited 6 people, now there are only 5... does that mean the 1 person has declined it?

No it means that 1 person didn't accept it. They could have ignored it or declined it.

It means they removed the event if they aren't in the list at all anymore

On the left side of the event page it has headings for going/maybe/invited. Click on any of the headings (e.g going) and it brings up a small window type thing which shows the full list of people who have said they are going. From here you can view a full list of All, going, hosts, maybe, declined and invited.
