probably Economics

LSE/UCL/Oxford/Warwick are the strongest departments, although a Masters from Cambridge should be just as employable due to the university brand name even though the department isn't quite as good. Manchester/Edinburgh/Bristol/Nottingham are also good, as is Essex despite the poor university brand.

Apart from those above, HSPS from Cambridge, SSEES combined courses from UCL and all the LSE courses like Government&History (if you want to avoid taking Economics)

Very broad question really, surely you have some idea of what job you want to do? And what your undergrad was will affect what you can do. Economics is almost certainly the most employable but if you don't have economics undergrad you'll need at least an extra year of a PGDip to get onto an Econ masters course, and if you want to do something entirely different then it's not appropriate either.

A research-methods focused degree could also be quite employable with flexible options.

Politics, MPP etc could also have good prospects but jobs in these arenas can be quite competitive to get into as well.
