Would you just apply or resit AAC to do Psychology?

I got AAC in my A levels (A in Psychology + Sociology and C in History)... I know there are some uni's which will still accept me onto courses, however would it be worth resitting some exams to try to get AAA or equivalent to get into some higher entry requirement uni's?

depends which AAA unis you were thinking of. UCL, St Andrews & Edinburgh won't consider resits but others might. Personally if I was taking a gap year I would resit and apply to a mix of unis- some that would take me with AAC and some wanting AAB+

Could you resit just one exam from the History? There are lots of good unis who look for AAB so you could aim for that
