I'm quite sure universities would want you to take the LNAT after your GAP year; before you apply. It seems reasonable that they would do this, because it would allow for a more accurate evaluation of the applicants, all of who took the same exam. In addition, there are the obvious changes in statistics/percentiles from year to year.

I would assume they use the most recent score for admission.
as far as i know you will need to take it again
From the FAQs on the LNAT website:

Q: If I took the LNAT last year, is my result carried forward?
A: No. If you are reapplying through UCAS this year, you must also take the LNAT afresh this year. Every new UCAS year you start with a clean LNAT slate. Your old result is expunged from the system.
