Your subject choices are acceptable for most, if not all, PPE courses.

Never really considered PPE until this week!
I'm in year 12 taking my AS levels currently, and originally I planned to take History, Art, Psychology and History of Art - however Psychology I did not like so switched to Politics which I absolutely love.

Intending to keep all four next year - if not, then I will continue with: History, Politics, Art.

My ALICE/predicted grades were A A A* for these three subjects, with an A in history of art too

is this a good mix? i have also done silver d of e, tutor maths weekly to gcse students as well as have a part-time job (in topshop..!)
Also gained 6 A* and 6 A's at GCSE, so where would I look to apply to? thanks

D of E and the part time job won't assist with your application per se- admissions tutors are most interested in relevant qualifications. Oxford say that although maths isn't essential 90% of successful applications for PPE in 2011 had Maths to at least AS Level or equivalent- make of that what you will. I should imagine for most universities your subject choices are fine.
