How much do universities care about dropped A-level subjects?

I'm taking chemistry, physics, biology and art, but I only want to take art to AS, leaving me with the sciences. I know that maths is the more traditional addition to science, but I've avoided it because I find it boring. Basically, I substituted maths for physics because physics is like maths with a sense of purpose.

What I'm really asking is this: if I applied to a science based course (one that doesn't need maths), would they care that much about art being one of my a-level choices? I was wondering if, because they look at your 3 most relevant a-levels, they wouldn't care.

By the way, I'm predicted an A* in GCSE maths.
