Earn money and build work experience in your chosen field/university course. Do something fun too like travel or learn something new and meet new people

That all depends on what you want to do as a career?

Two things you should (IMO) definitely do; gain work experience in a relevant field (either through paid employment or volunteering); travel!

these are things which get increasingly difficult as you get older and you should really take the opportunity to do them whilst it is, relatively, easy.
Things that you may never get a chance to do again, thats what i did

I took a 2 year gap-year. In that time I decided to do things i knew i wouldnt be able to do again when I had a house, careers, kids etc: Went travelling and worked a below-minimum wage job i loved. I recommend it.

Lol well I trained to fight MMA , otherwise known as "cagefighting" (Despise the term). Its been a passion of mine, and I knew my gap year was my only chance to train enough to be able to compete and fight. Once I start medicine I probably won't have the time to train anywhere near as much as I am now
