Will the uni accommodation internet provider check if students are using Genuine paid software and operating system

or they dont care

That's when you know you've been lead astray. The mode claims to delete your history/not stored and all the cookies created during your session are also deleted but are they?

Your browser data will always be logged and if you check their terms of services, it explicitly states that. Your ISP does store information about your browser habits so incognito mode doesn't really do anything that special.

When you open incognito it quite explicitly says that it's only locally deleted, and people higher up can still see:
