Why does Uni in the UK start so late?

I feel like the school year in the UK is really short! Here in the US, we start university around late August, early September, and don't get out until early/mid may.
US high schools get all of July off, we don't.

In Northern Ireland we get all of July (as does Scotland) so technically part of the UK does

It actually varies around the UK

For schools:
Northern Ireland school year = beginning September to end of June
Scotland is usually mid August - first few days of July
England and Wales = September - late July

Then you have universities which start in September or October and can finish any time around May or June, depending on course, institution, exam times etc.
