It depends on your accommodation, but most will allow you to stay over the holidays. The average contact for student accommodation is 42 weeks, if you find it says something like 32 then you probably have to pack up during the holidays, most accommodations will also allow you stay over summer too if you can afford the extra 3 months rent.

From October until December, is there a holiday of some sort where we have to go home?

Same with January until summer, how long is uni for exactly? Is there a structure like school

It depends on your accommodation contract mostly you can stay in you accommodation over Christmas Easter and even part of the summer (during the exam period) You don't need to come back home at any time, although you can go home at any time.

There is no holiday around that time except some places have what's called a reading week which is essentially like a half term but designed to be used for independent study however less and less places have this so it's not for sure you'll have one you can still stay in halls during this time if you want.

Well you have a time table you can miss the occasional day or lecture without a note but for hand in's and exams you will need a valid EC form which most of the time will require a doctor or other evidence. Remember though it's best to attend other wise things can get pretty tricky.

Uni is usually from the end of September or start of October until about June when the exams end (exams start in about May).

During Christmas and Easter holidays typically students can go home but some do stay (i.e. like if they have a job and need to stay at uni forit). However, it really differs with each person. Most tenancy contracts will run from September to June (ish) and allow students to stay during both term time and holiday.

The majority of universities have reading weeks which fall between October/ November, and then around March time. The specific dates depend on your university and their term times. Usually it's term 1 which is 12 weeks, and then term 2 is 12 weeks, then after Easter in April there will be a few weeks which typically are for exams and revision.
